MY SPECIAL PROTEIN PANCAKES:

Ingredients:

– 1 cup of coconut flour
– 1/2 cup of protein of your choosing (I use the Vanilla Vegan Protein from Protein World)
– 1 tablespoon of baking powder
– pinch of pink salt
– 1 teaspoon of cinnamon
– 1 medium banana (mashed)
– 2 tablespoons of maple syrup
– Almond Milk
Method:
1. Combine all the dry ingredients in a large mixing bowl, creating a small well in the middle.
2. In a separate bowl combined the mash the banana and maple syrup.
3. Combine the banana and maple syrup mixture into the dry mixing bowl and mix thoroughly.
4. Slowly add the almond milk into the mixing bowl stirring with a whisk until the batter is a thick and combined thoroughly. The mixture should be a little thicker then usual but if you like them thinner just add a little more almond milk to suit you.
5. Cook in a hot non-stick pan until bubbles appear in surface then flip and cook for another minute or two.
6. Served with sliced banana, mixed berries and mint!
ENJOY
